Traditional balsamic vinegar tasting

Free in Modena, €28 at Novellara DOP aged 12 or 25 years About 1 hour from Parma

Balsamic vinegar is not a Parma product. It comes from Modena and Reggio Emilia, 45 minutes to an hour east of Parma, and the best visits are there. What you learn is worth the drive: the difference between Aceto Balsamico Tradizionale DOP, aged at least 12 years in a series of wooden casks, and the far cheaper Aceto Balsamico di Modena IGP on supermarket shelves.

You do not have to pay to taste it. Acetaia Malpighi in Modena runs free guided tours by reservation. Acetaia San Giacomo, at Novellara in the Reggio plain, charges €28 for a fuller visit and tasting.

Free: Acetaia Malpighi, Modena

  • Price: free guided tour with a free "vertical" tasting, youngest to oldest, of the Malpighi range: DOP, IGP, dressings, saba and balsamic chocolates.
  • Length: 30 to 60 minutes; groups small or large; Italian, English or French.
  • Where: either the Taste&Tour company museum at Via Vignolese 1487, which Malpighi says is 300 m from the Modena Sud motorway exit, or the showroom on Piazza Roma in central Modena, facing the Ducal Palace.
  • Booking: required, ideally 48 hours ahead: +39 059 467725, [email protected]. Arrive on time; more than 15 minutes late and the tour may be cut short.
  • Extra: a paid aperitivo with Parmigiano, cured meats and Lambrusco for groups of 10 to 20.

San Giacomo says it is open every day and sometimes at weekends, by booking only (+39 334 7074947, WhatsApp too). It asks visitors not to book just to fill a day, and suggests the municipal acetaie of Reggio and Modena for that. It is at Strada Pennella 1, Novellara, about 48 km (30 miles) from Parma.

Tour or do it yourself?

Balsamic is usually the third stop on a Food Valley day. On September 29, 2026, GetYourGuide listed ParmaLook's cheese, ham and balsamic tour from Parma at €170 (the product page showed €183 for the default date), 6.5 hours by van, with a family balsamic producer and museum in Modena; lunch is not included. A Bologna-based Parmigiano and balsamic tour was €140.

If balsamic is your main interest, doing it yourself is cheaper: Malpighi costs nothing, and the Modena train is quick. The tour wins only if you also want the dairy and ham house and have no car. See our Food Valley day tour page.

Acetaie Aperte

The Modena DOP consortium runs "Acetaie Aperte", open acetaie with guided tastings, on a Sunday in September; its 2025 edition was billed as running September 25 to October 4, 2025. We found no 2026 dates on the consortium site on September 29, 2026.
