Al Vèdel is a restaurant at Via Vedole 68, in the flat farmland outside Colorno, about 20 minutes north of Parma by car. It shares its courtyard with Podere Cadassa, the family's salumi business, where more than 7,000 culatelli hang in the curing rooms. The Bergonzi family says it has practiced Parma pork butchery for more than two centuries, and the restaurant's sign dates its kitchen to 1780.
The Michelin Guide lists Al Vèdel in 2026 without a distinction, in the €€ band, and mentions culatello aged 16, 26 and 38 months and a cheese trolley. It closes on Monday and Tuesday. The Reggia di Colorno, the Duchy's summer palace, is 3.3 km away.

The culatello
Order the house product first. The three-age selection of Culatello Terre di Nebbia from Podere Cadassa, 16, 26 and 38 months, a Slow Food presidium product, costs €22 and comes with butter from Solo Bruna and Vacca Rossa cows. A single 26-month plate is €20. The "Gran Nero" tasting of black-pig salumi is €24, and a plate of the traditional Podere Cadassa salumi with warm spalla cotta and mostarda is €16. The wine
The list runs to about 2,000 bottles, according to the restaurant, and the Michelin Guide notes a Lambrusco focus alongside international wines. It is a good place to try a serious Lambrusco with culatello, which is the classic pairing.
What Podere Cadassa makes
The curing house produces more than culatello: fiocchetto, spalla cruda di Palasone, spalla cotta di San Secondo, salame gentile, strolghino, mariola, coppa, pancetta and cotechino. Several are hard to find outside the Bassa. The restaurant does not publish shop hours for buying to take home, so ask at the end of the meal; the buying guide covers what you can carry back through customs. Angiol d'Or in central Parma also serves Podere Cadassa culatello if you cannot make the drive.

Al Vèdel is 3.3 km by road from the Reggia di Colorno, about 6 minutes by car. See the palace in the morning and book lunch here. The website offers a virtual tour of the culatello rooms; Michelin mentions that the aged culatelli can be visited, but the restaurant does not publish visit times or a price, so ask when you book.
