Antica Corte Pallavicina

Antica Corte Pallavicina is a fortified farm and castle on the Po at Polesine Parmense, 40.7 km (25 miles) northwest of Parma. Chef Massimo Spigaroli and his brother Luciano run it as a working estate: they raise black pigs, grow their own vegetables, make wine and cure culatello on an estate whose cellars date from 1320. The family were sharecroppers on Giuseppe Verdi's farm before they became cooks.

The restaurant has held a Michelin star since 2011 and keeps it in the 2026 guide, one of only two in the province. You can eat here three ways: the starred restaurant, the rustic Hosteria del Maiale in the old stables, or a tasting at the end of a museum visit.

The €150 culatello menu

The tasting menu called I Culatelli dell'Antica Corte Pallavicina costs €150 and is built around the house product: culatello aged 18 and 27 months (a Slow Food presidium), a poached egg with sweet potato and golena truffle, Platinum culatello aged 40 months, carrot "buttons" with anchovy, the 42-month Gran Riserva, the cheese trolley and dessert. With a bottle of Krug Grande Cuvée shared between two, the same menu is €300. A second €150 menu, "the first fifteen years", strings together dishes created for guests such as Alain Ducasse and Anthony Bourdain. Children's menu €40.

The cheaper way in: Hosteria del Maiale

The Hosteria del Maiale e del Culatello, open every day, serves the estate's products at trattoria prices: a culatello board with giardiniera €18, mixed salumi €16, tortelli di erbette or anolini in brodo €12, braised white ox with polenta €18, desserts €7, cover €3. The estate's own Lambrusco and Fortana are €5 a glass. Two people can have a culatello lunch here for about €60 with wine.

The culatello museum

The Museo del Culatello e del Masalén tells the story of the Po, the pig and the masalén (the traveling pork butchers), and ends in the underground gallery where culatelli hang to age. It opens Tuesday to Sunday, 10 a.m. to 6 p.m. (last entry 5:30 p.m.), is closed on non-holiday Mondays and from January 7 to February 10 (the same page lists February 1 as its reopening, so phone in early February), and costs €7 with an audio guide in English. Staying and getting there

The relais has 12 rooms, from €190 a night for a standard double to €360 for a suite, breakfast included, on its official price list checked September 29, 2026. A room booking does not reserve a dinner table, so book both. The drive from Parma is about 48 minutes; combine it with the Bassa Parmense or Busseto. The restaurant lists a private driver service for guests without a car.
