Chef Francesco Ziveri, born in Parma and trained at the Salsomaggiore hotel school and in Paris, took it on in 1997. The food is Emilian at its base with modern touches. The Michelin inspectors name four dishes, which is a useful shortlist:
- Crispy rabbit loin wrapped in Parma ham, with onion, carrot and a mushroom cream.
- Tortelli with ricotta and erbette in melted butter and Parmigiano, the city's classic tortelli d'erbetta.

The room and the wine
This is a small osteria, not a big trattoria, so tables are limited. The Michelin write-up praises a well-built wine list, and the osteria also runs a large catering and wedding business from a separate base on Via Nobel, which is why its website talks more about events than about the restaurant. Ask for a local Lambrusco or Malvasia by the glass.

Parma trattorie often shut for part of the summer. Getting there
Strada Aurelio Saffi is on the east side of the historic center. By OpenStreetMap's walking route the osteria is 760 m (0.5 miles) from Piazza Garibaldi, about 10 minutes on foot, which makes it an easy dinner after an afternoon at the Duomo and San Giovanni Evangelista. Cars are a bad idea: the center is a limited-traffic zone, covered on the ZTL and parking page.
