
Salame di Felino
Salame Felino is a soft, mild pork salami named after Felino, a town in the first hills south of Parma. The Food Museums describe the mix: lean shoulder, belly and prosciutto trimmings, with 25–30% of harder fat, ground coarse, seasoned with salt, whole peppercorns and white wine, and hand-stuffed into natural pork casing. It became an IGP on March 5, 2013, and can be made anywhere in the province of Parma.
Tradition says to slice it on a 60-degree slant, which shows off the grain and stops the soft slices crumbling. It cost about €27–€32 per kg at a Parma shop on September 29, 2026.

Why Felino
- Salt and air: the Food Museums credit Felino's spot at the mouth of the Baganza valley, and good salt from nearby Salsomaggiore, for a salami that needed less salt than most.
- The first record: in 1436 the condottiere Niccolò Piccinino ordered twenty pigs "pro sallamine", for salami.
- In stone: in the Aquarius panel of the months cycle inside the Baptistery of Parma, Benedetto Antelami carved two salami of the Felino type, according to the museum.
- By 1897 it was the best known of the "Parma" salami sold in Milan.

Ugolotti says its salame is aged about 2–3 months. Prices were read on September 29, 2026. At roughly €30 a kilo it costs less than prosciutto (about €35) and a third of culatello.
The Salame Museum in Felino
The Museo del Salame is at Via Giosuè Carducci 11, in the Felino castle complex, about 18 km (11 miles) and 24 minutes' drive from Piazza Garibaldi. From March 1 to December 8 it opens Saturdays, Sundays and holidays, 10 a.m. to 6 p.m.; on weekdays only for booked guided visits. December to February it opens only for booked groups.

Taking it home
You cannot. USDA's traveler page names salami from Italy among products travelers "may not" bring into the US, and GOV.UK bans pork products from the EU. Eat it here with torta fritta.
