
Torta fritta
Torta fritta is dough cut into diamonds and fried until each piece balloons into a hollow, crisp-edged pillow. You eat it hot, torn open, with a slice of prosciutto or salame draped on top so the fat just starts to melt. It is not a dish on its own: it is the bread of the salumi plate.
It is also the cheapest line on the menu. On September 29, 2026 a portion cost €4.50 at Trattoria del Tribunale and €3 for four pieces at Trattoria Ai Due Platani.

For two people, one tasting plate and one basket (€18.50) is a full starter. Warm spalla cotta on hot torta fritta is the richest combination on that list.
A bigger board, outside the center
Trattoria Ai Due Platani in Coloreto names the maker of every salume on its spring 2026 menu, which makes it the place to build a board around torta fritta:

With two baskets of torta fritta (€6) and the €2 cover each, a mixed plate for two comes to €22 before wine. In the center, Brisla Trattoria on Strada Farini lists 30-month prosciutto at €14 and culatello at €22 on its website menu, so Tribunale remains the cheaper board in town.
Torta fritta or gnocco fritto?

- Order it first, with the salumi. It arrives hot and deflates as it cools.
- Portions are small by design. Order a second basket rather than a bigger first one.
